Zuo Zongtang was a prominent military leader in the late Qing Dynasty, holding various positions such as Zhejiang governor, Shaanxi-Gansu governor, governor of the Jiangnan and Jiangxi provinces, and governor of Fujian-Zhejiang. Throughout his life, Zuo Zongtang had a fondness for chicken, especially enjoying it when fried to a crispy and fragrant texture. Legend has it that every time Zuo Zongtang led his troops to victory, he would celebrate by preparing chicken to reward the soldiers. Due to his military successes, particularly in reclaiming Xinjiang, Zuo Zongtang gained influence and deterrence in the Western world, becoming an influential and formidable figure among the Chinese. Consequently, "Zuo Zongtang Chicken" spread overseas and became one of the representative dishes of Chinese cuisine.
